The bee is more honoured than other animals, not because she labours, but because she labours for others.

Our honey is raw, which means it retains all of its natural enzymes and nutrients. It also has a unique flavour profile depending on the types of flowers our bees pollinate.

Our honey is just as the bees in my apiary make it, simply extracted and jarred. Unfortunately if you check most commercial honey in the shops you will see on the label it is a mix EU and Non-EU honey so there is potential for adulteration such as adding corn syrup as it moves through the supply chain.

We keep the native honeybee (Apis Mellifera Mellifera).

Though under pressure, Ireland boasts one of the purest strains.
